Eat mostly stable, flexible fats and you build membranes that hold their shape and pass signals cleanly. Eat mostly damaged or unstable fats and you build membranes that are stiff, leaky, or prone to oxidation.
Barrier
The membrane keeps the cell's contents in and unwanted molecules out. Its integrity depends on the balance of fats woven into it — too much of the wrong fat and the barrier becomes leaky or rigid.
Fluidity
A healthy membrane is not stiff and not sloppy — it has a specific flexibility that lets receptors move, hormones dock, and channels open and close. Omega-3 fats increase fluidity; heavily processed and damaged fats reduce it.

Omega-6 fats tend to feed the body's pro-inflammatory pathways (part of a normal, useful response), while omega-3 fats tend to feed the resolving, anti-inflammatory pathways that switch that response off. You need both signals. Ancestral diets ran somewhere near a 1-to-1 to 4-to-1 ratio of omega-6 to omega-3. Modern industrialized diets often run 15-to-1 or higher, heavily weighted toward omega-6, largely because of the oils quietly added to almost everything.

- The goal is not zero omega-6 — it is restoring the balance by raising omega-3 and lowering the refined, industrial omega-6 that dominates processed food

The problem with industrial seed oils.
Refined seed oils — soybean, corn, cottonseed, safflower, sunflower, canola, and similar — became cheap and ubiquitous over the last century. The concern is not that they are plant-based. The polyunsaturated fats in them are chemically fragile, which means they oxidize — essentially go rancid — easily when exposed to heat, light, and air. When you eat oxidized fat, you are feeding your cell membranes damaged building material.
Fragile by nature
Polyunsaturated fats have chemical bonds that break down under heat. Frying and high-temperature cooking with these oils accelerates the formation of oxidized byproducts — the opposite of what you want to build stable membranes from.
Everywhere at once
Because they are inexpensive, seed oils appear in salad dressings, chips, crackers, baked goods, sauces, plant-based spreads, and nearly all fried and packaged foods. The dose adds up quietly across a day without any single obvious source.

Seed oils are the single largest reason modern diets swing so far toward omega-6. Reducing them is often the most effective way to move your omega balance back toward the range your cells were built for.
The fats worth building from.
The simplest rule: favor fats that are stable, minimally processed, and close to their whole-food form. These are the fats humans have eaten for a very long time, and they hold up better in cooking and in your cell membranes.
- Extra virgin olive oil — rich in stable monounsaturated fat and protective polyphenols; best used for dressings and gentle cooking
- Avocado and avocado oil — monounsaturated, higher heat tolerance, and paired with fiber and potassium in the whole fruit
- Wild fatty fish — salmon, sardines, mackerel, anchovies — the most direct source of the long-chain omega-3s (EPA and DHA) your brain and membranes use directly
- Pastured eggs and grass-fed meat — deliver omega-3s and fat-soluble vitamins in their natural food matrix
